Ingredients

1 cup cooked chicken, shredded or diced

1 cup shredded cheddar cheese

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup cold butter, cubed

3/4 cup milk

1/4 cup fresh chives, chopped (optional)

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional, for added heat)

Instructions

Preheat the Oven:

Begin by preheating your oven to 425°F (220°C). Meanwhile, place a cast-iron skillet or any oven-safe skillet over medium heat on the stove.

      Prepare the Dry Mixture:

In a large mixing bowl, combine the flour, baking powder, salt, black pepper, garlic powder, paprika, and cayenne pepper. Whisk these dry ingredients together until fully blended.

          Cut in the Butter:

Add the cubed cold butter to your flour mixture. Use a pastry cutter or your fingertips to blend the butter in, until the mixture resembles coarse crumbs with small, pea-sized butter pieces.

              Incorporate Wet Ingredients:

Gradually pour the milk into the flour mixture, stirring gently until just combined. Avoid overmixing to ensure tender biscuits. Carefully fold in the shredded chicken, cheddar cheese, and chopped chives (if using).

                  Form and Shape the Biscuits:

Lightly flour a clean surface and turn out the biscuit dough onto it. Knead the dough gently just a few times until it comes together. Pat the dough into a thickness of about 1 inch and use a biscuit cutter or a knife to create mini biscuits. You should yield approximately 10-12 biscuits.

Sauté the Chicken in the Skillet:

In the preheated skillet, drizzle in the olive oil. If desired, sauté any additional diced chicken or leftover rotisserie chicken for 2-3 minutes until warmed through. This adds flavor and moisture to the dish.

                          Add Biscuits to the Skillet:

Carefully arrange the mini biscuits on top of the sautéed chicken in the skillet, allowing them to slightly overlap for a cohesive look.

                              Bake in the Oven:

Transfer the skillet to the hot oven and bake for 12-15 minutes, or until the biscuits rise and turn golden brown.

                                  Serve and Enjoy:

Once baked to perfection, remove the skillet from the oven and let it cool for a few minutes. Serve the dish hot, garnished with additional chopped chives or a sprinkle of cheddar cheese if desired for added flavor and visual appeal.
