Mediterranean Chicken Pita with Tzatziki Sauce

For the Chicken:

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and black pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1/2 cucumber, grated and excess water squeezed out

1 clove garlic, minced

1 tablespoon fresh dill, chopped

1 tablespoon olive oil

Juice of 1/2 lemon

Salt and pepper to taste

For the Assembly:

4 whole-wheat pita breads

1 cup chopped Romaine lettuce

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/2 cup feta cheese, crumbled

Fresh parsley for garnish (optional)

Instructions
 

Marinate the Chicken:

    - In a mixing bowl, combine the olive oil, oregano, smoked paprika, garlic powder, salt, and black pepper to create a marinade. Add the chicken breasts to the bowl, ensuring they are thoroughly coated with the marinade. Cover the bowl with plastic wrap or a lid and allow it to marinate in the refrigerator for a minimum of 30 minutes, or you can let it marinate for up to 2 hours for enhanced flavor.

      Prepare the Tzatziki Sauce:

        - In a separate medium bowl, mix together the Greek yogurt, grated cucumber (make sure to squeeze out the excess liquid), minced garlic, chopped fresh dill, olive oil, and lemon juice. Stir everything until well combined and season with salt and pepper to taste. To allow the flavors to develop, cover and refrigerate the sauce for at least 20 minutes.

          Grill the Chicken:

            - Preheat your grill or grill pan to medium-high heat. Once hot, place the marinated chicken breasts on the grill. Cook for approximately 6-7 minutes per side, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C). After grilling, remove the chicken from the grill and allow it to rest for a few minutes before slicing into strips.

              Assemble the Pitas:

                - To warm the whole wheat pita breads, place them in a dry skillet over medium heat for about 1 minute on each side, or microwave them for 10-15 seconds until warm. Once warmed, take each pita and layer the bottom with chopped Romaine lettuce, followed by slices of grilled chicken, halved cherry tomatoes, thinly sliced red onion, crumbled feta cheese, and finish with a generous spoonful of tzatziki sauce.

                  Serve:
