Ingredients

1 lb Brussels sprouts, trimmed and halved

2 tablespoons extra virgin olive oil

1/4 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

1/4 cup pure maple syrup

1 tablespoon balsamic vinegar

1 tablespoon Dijon mustard

1/4 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional, for a hint of spice)

1/4 cup pecans, roughly chopped (for garnish)

Fresh parsley, finely chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). To simplify cleanup, line a baking sheet with parchment paper.

Prepare the Brussels Sprouts: In a large mixing bowl, add the trimmed and halved Brussels sprouts. Pour in the olive oil, sprinkle with sea salt and black pepper. Toss thoroughly until all the sprouts are evenly coated with the oil and seasoning.

Roast the Brussels Sprouts: Spread the seasoned Brussels sprouts evenly across the prepared baking sheet in a single layer for optimal roasting. Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the sprouts are golden brown and fork-tender, remembering to stir them halfway through to ensure even cooking.

Make the Maple Glaze: While the Brussels sprouts are roasting, prepare the maple glaze. In a small saucepan over medium heat, mix together the maple syrup, balsamic vinegar, Dijon mustard, garlic powder, and red pepper flakes (if using). Stir the mixture well and allow it to simmer for about 3-4 minutes until it thickens slightly, then remove it from the heat.

Glaze the Brussels Sprouts: Once the Brussels sprouts are roasted to perfection, take them out of the oven. Drizzle the warm maple glaze generously over the Brussels sprouts and toss them gently to ensure they are thoroughly coated.

Final Roast: Return the glazed Brussels sprouts back to the oven and roast for an additional 5 minutes. This final roasting will allow the glaze to caramelize and enhance the flavors.

Serve: After the final roast, remove the Brussels sprouts from the oven and transfer them to a serving dish. Top off with the chopped pecans and sprinkle with fresh parsley for a burst of color and added crunch. Serve warm and enjoy this delicious side dish!
