14 oz firm tofu, pressed and cut into ½-inch cubes

1 ripe mango, peeled and diced

3 tbsp soy sauce

2 tbsp maple syrup or agave nectar

1 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1-inch piece of fresh ginger, grated

1 tbsp cornstarch (for coating)

2 tbsp vegetable oil (for frying)

Salt and freshly ground pepper, to taste

Fresh cilantro leaves, for garnish

Toasted sesame seeds, for garnish

Lime wedges, for serving

Prepare the Mango Glaze: In a blender, add the diced mango, soy sauce, maple syrup (or agave nectar), rice vinegar, sesame oil, minced garlic, and grated ginger. Blend on high until the mixture is smooth and creamy. Set the mango glaze aside for later use.

    Coat the Tofu: In a mixing bowl, take the cubed tofu and sprinkle over the cornstarch, salt, and freshly ground pepper. Gently toss the tofu until all pieces are evenly coated. This step is crucial for achieving a desirable crispy texture while frying.

      Cook the Tofu: Heat the vegetable oil in a large non-stick skillet over medium-high heat. Once the oil is shimmering, carefully add the coated tofu cubes in a single layer. Fry for 4-5 minutes per side, or until the tofu is golden brown and crispy all over. Once cooked to perfection, remove the tofu from the skillet and set it aside on a paper towel-lined plate to absorb any excess oil.
