1 large ripe mango, diced into bite-sized pieces

½ cucumber, peeled and diced for crunch

¼ red onion, thinly sliced for a hint of sharpness

1 avocado, diced for creaminess

½ cup cherry tomatoes, halved for sweetness

Instructions
 

Prep the Chicken: If using leftover chicken, shred it into bite-sized pieces with two forks or by hand. If you are cooking fresh chicken, grill or poach the chicken breast until it reaches an internal temperature of 165°F (75°C). Allow it to cool before shredding.

    Prepare the Dressing: In a small bowl, whisk together the juice of 1 lime, olive oil, honey (if desired), and a pinch of salt and pepper. Whisk until the ingredients emulsify and become well combined creating a zesty dressing.
