1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

1/4 cup low sodium soy sauce

1/4 cup honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

Sesame seeds and sliced green onions for garnish

4 cups broccoli florets

1 tablespoon olive oil

Salt and pepper, to taste

For the Rice:

2 cups jasmine rice

4 cups water or chicken broth

1 tablespoon butter (optional)

Prepare the Marinade: In a medium mixing bowl, combine the low sodium soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Whisk until well blended. Place the chicken pieces in a large resealable plastic bag or bowl and pour the marinade over them. Seal the bag or cover the bowl and refrigerate for a minimum of 30 minutes, ideally allowing the flavors to meld for up to 2 hours.

    Cook the Rice: Rinse the jasmine rice under cold water until the water appears clear to remove excess starch. In a medium saucepan, bring 4 cups of water (or chicken broth for a richer flavor) to a boil. Add the rinsed rice and optional butter for added richness. Stir briefly, cover the pot, and reduce the heat to low. Allow it to simmer for about 15 minutes or until the liquid has been fully absorbed.
