2 medium apples (preferably Honeycrisp or Fuji), cored and julienned

2 large carrots, peeled and grated

1 cup red cabbage, finely shredded

1/4 cup walnuts, roughly chopped

1/4 cup raisins or cranberries

3 tablespoons honey

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1/4 cup olive oil

Salt and pepper, to taste

Fresh parsley, chopped for garnish

Preheat the Oven: Set your oven to 350°F (175°C) to prepare for roasting the apples.
