Ingredients

1 pound large shrimp, peeled and deveined

3 tablespoons honey

3 tablespoons low-sodium soy sauce

2 tablespoons sesame oil

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, sliced into thin strips

1 cup broccoli florets, bite-sized

1 cup snap peas, trimmed

1 medium carrot, julienned

2 green onions, thinly sliced (for garnish)

1 tablespoon sesame seeds (optional, for garnish)

Salt and black pepper, to taste

Cooked jasmine or brown rice, for serving

Instructions

Prep the Sauce: In a small mixing bowl, combine the honey, low-sodium soy sauce, minced garlic, and grated ginger. Whisk until well blended and set the mixture aside for later use.

Heat the Pan: Place a large skillet or wok on the stove over medium-high heat. Add the sesame oil and allow it to heat until it shimmers.

Cook the Shrimp: Carefully add the shrimp to the hot skillet in a single layer. Season them with salt and black pepper. Sauté the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Once cooked, transfer the shrimp to a large plate and set them aside.

Stir Fry the Veggies: In the same skillet, introduce the sliced red bell pepper, broccoli florets, snap peas, and julienned carrot. Stir fry the vegetables for approximately 4-5 minutes, stirring constantly, until they are tender-crisp and vibrant in color.

Combine Everything: Return the cooked shrimp to the skillet with the sautéed vegetables. Pour the honey garlic sauce over the shrimp and veggies, tossing everything together to ensure even coating. Allow the mixture to cook for an additional 2 minutes, letting the flavors meld.

Garnish and Serve: Once everything is well combined and heated through, remove the skillet from the heat. Garnish with sliced green onions and sprinkle with sesame seeds, if desired. Serve the delicious honey garlic shrimp stir fry over bowls of fluffy cooked jasmine or brown rice.
