1 pound large shrimp, peeled and deveined

2 cups broccoli florets

2 tablespoons vegetable oil

4 cloves garlic, finely minced

1 teaspoon fresh ginger, finely minced

1/4 cup honey

1/4 cup low-sodium soy sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons cold water

Sesame seeds, for garnish

Chopped green onions, for garnish

Cooked jasmine rice or noodles, for serving

Instructions
 

Prepare the Sauce: In a small mixing bowl, combine the honey, soy sauce, rice vinegar, cornstarch, and cold water. Whisk thoroughly until the mixture is smooth and the cornstarch is fully dissolved. Set this sauce aside for later use.

    Blanch the Broccoli: Fill a pot with water, lightly salted, and bring it to a rolling boil. Add the broccoli florets and blanch them for 2-3 minutes, or until they are bright green and just tender. Immediately drain the broccoli and immerse it in a bowl of ice water to stop the cooking process. Once cooled, drain again and set the broccoli aside.

      Cook the Shrimp: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Carefully place the shrimp in a single layer in the skillet. Cook for about 2-3 minutes, turning occasionally, until the shrimp turn pink and opaque. Once done, remove the shrimp from the skillet and set aside on a plate.

        Sauté the Aromatics: Using the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger. Sauté for approximately 30 seconds, stirring frequently, until they become fragrant but are not browned.

          Combine Ingredients: Return the blanched broccoli to the skillet and stir well to combine with the garlic and ginger. Pour in the prepared honey sauce and keep stirring until the sauce thickens slightly, which should take about 1-2 minutes.

            Add the Shrimp: Place the cooked shrimp back into the skillet, tossing gently until all the shrimp are evenly coated with the sauce. Allow them to heat through for an additional 1-2 minutes.
