2 cups cooked and shredded chicken

1 cup roasted Hatch green chilies, diced (fresh or canned)

1 cup shredded Monterey Jack cheese

1 cup black beans, drained and rinsed

½ cup sour cream

¼ cup fresh cilantro, chopped

2 teaspoons ground cumin

1 teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

4 large flour tortillas

1 tablespoon olive oil

Prepare the Filling:

    In a large mixing bowl, combine the cooked and shredded chicken, diced roasted Hatch green chilies, shredded Monterey Jack cheese, black beans, sour cream, chopped cilantro, ground cumin, garlic powder, smoked paprika, salt, and pepper.       Assemble the Burritos:

        Place one tortilla flat on a clean surface. Spoon a generous amount of the filling (about ⅓ cup) onto the center of the tortilla, being careful not to overfill it. Fold the sides of the tortilla inward and then roll it tightly from the bottom up to form a burrito. Repeat this process for the remaining tortillas until all the filling is used.

          Heat the Pan:
