Ingredients

1 bag (12 ounces) tortilla chips

2 cups sharp cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

1 cup hatch green chiles, roasted and chopped (or canned)

1/2 cup red onion, diced

1/2 cup black olives, sliced

1 ripe avocado, diced

1/4 cup fresh cilantro, chopped

1/2 cup sour cream

1/4 cup your favorite salsa

1 tablespoon lime juice

Jalapeño slices (optional, for those who enjoy more heat)

Salt and pepper to taste

Instructions

Preheat Your Oven: Set your oven to 350°F (175°C) to prepare for baking the nachos.

Make the Cheese Mixture: In a mixing bowl, combine the shredded sharp cheddar cheese, Monterey Jack cheese, and chopped hatch green chiles. Stir well until all ingredients are evenly mixed.

Arrange the Tortilla Chips: On a large baking sheet or an oven-safe platter, spread the tortilla chips out in an even layer. Sprinkle roughly half of the cheese mixture over the chips, then evenly distribute the diced red onion, sliced black olives, and any jalapeño slices if you're adding them.

Add More Layers: Place the remaining tortilla chips over the first layer. Top this layer with the rest of the cheese mixture to ensure that every bite is packed with cheesy goodness.

Bake the Nachos: Transfer the baking sheet with the nachos into the preheated oven. Bake for about 10-12 minutes, or until the cheese is melted, bubbly, and slightly golden.

Prepare the Avocado Topping: While the nachos are baking, prepare the avocado topping. In a small bowl, combine the diced avocado with lime juice, and season with salt and pepper to taste. This will help to keep the avocado fresh and vibrant.

Remove and Garnish: Once the nachos are cooked to perfection, carefully take them out of the oven. Top the nachos with the avocado mixture, sprinkle fresh cilantro over the top, and add dollops of sour cream.

Serve with Salsa: Drizzle salsa over the nachos for extra flavor, or serve it on the side as a dip for an added touch of deliciousness.

Dig In: Serve the nachos immediately while they are hot and cheesy. Pair them with your favorite beverage for a perfect snack or appetizer!
