1 block (250g) Halloumi cheese, cut into 1-inch cubes

2 ripe peaches, pitted and cut into wedges

2 tablespoons extra virgin olive oil

1 tablespoon honey

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Sea salt and freshly ground black pepper, to taste

Skewers (wooden or metal; if using wooden, soak in water for 30 minutes to prevent burning)

Marinate the Halloumi: In a mixing bowl, combine the olive oil, honey, thyme leaves, sea salt, and black pepper. Add the Halloumi cubes and gently toss them until fully coated with the marinade. Allow the cheese to marinate for 15 minutes, giving it enough time to absorb the flavors.

    Prepare the Skewers: After the Halloumi has marinated, take your soaked skewers and start threading them. Alternate between the peach wedges and Halloumi cubes to create a colorful and appetizing skewer. Aim to fit about 3-4 pieces of each onto each skewer.
