Grilled Chicken & Peach Skewers

2 ripe peaches, pitted and cut into wedges

1 red bell pepper, chopped into large chunks

3 tablespoons extra virgin olive oil

1 tablespoon honey

2 cloves garlic, finely minced

Prepare the Marinade: In a medium mixing bowl, whisk together the extra virgin olive oil, balsamic vinegar, honey, minced garlic, fresh thyme, salt, and pepper until well combined. This rich mixture will infuse your chicken with delightful flavors.

    Marinate the Chicken: Introduce the diced chicken pieces into the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap or a lid and place it in the refrigerator to marinate for at least 30 minutes, but for optimal flavor, aim for up to 2 hours.

      Soak Skewers (if using wooden): If you are using wooden skewers, immerse them in water for 20-30 minutes prior to grilling. This step prevents them from burning on the grill.

        Preheat the Grill: Get your grill ready by preheating it to medium-high heat, ideally between 375°F to 400°F. Ensure your grill grates are clean for perfect searing.
