Grilled Chicken & Peach Skewers

For the Chicken Marinade:

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

3 tablespoons olive oil

3 tablespoons balsamic vinegar

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon dried thyme

Salt and pepper, to taste

For the Skewers:

2 large ripe peaches, pitted and cut into wedges

1 red bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

Fresh basil leaves, for garnish

Optional Glaze:

2 tablespoons honey

1 tablespoon balsamic vinegar

Instructions
 

Marinate the Chicken:

    - In a mixing bowl, add the olive oil, balsamic vinegar, honey, minced garlic, dried thyme, salt, and pepper. Whisk together until well combined.

      - Add the chicken cubes to the marinade, ensuring each piece is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for a deeper flavor.

        Prepare the Skewers:

          - If you're using wooden skewers, soak them in water for approximately 30 minutes to prevent them from burning on the grill.

            - Once the marinating time is up, take the skewers and start threading the ingredients: alternate pieces of marinated chicken, peach wedges, red bell pepper pieces, and red onion wedges onto the skewers. Aim for 3-4 pieces of chicken per skewer, interspersed with fruit and vegetables for a colorful presentation.

              Preheat the Grill:
