Grilled Chicken and Mango Salsa Wraps

Ingredients
  

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and freshly ground black pepper to taste

4 whole wheat tortillas

1 ripe mango, diced into small pieces

1/2 red onion, finely chopped

1 red bell pepper, diced into small cubes

1 jalapeño, seeded and finely minced (optional for heat)

1/4 cup fresh cilantro, roughly chopped

Juice of 1 lime

1 avocado, sliced for garnish

Greek yogurt or sour cream (for serving, optional)

Instructions
 

Marinate the Chicken:

    In a mixing bowl, whisk together the olive oil, chili powder, ground cumin, garlic powder, salt, and black pepper. Add the chicken breasts to the bowl, ensuring they are thoroughly coated with the marinade. Cover and let them marinate for at least 30 minutes at room temperature, or for optimal flavor, refrigerate for up to 2 hours.

      Prepare the Mango Salsa:

        In a separate bowl, combine the diced mango, chopped red onion, diced red bell pepper, minced jalapeño (if using), and chopped cilantro. Drizzle the mixture with lime juice and season lightly with salt. Gently toss the ingredients together until well combined, then set aside to allow the flavors to meld.

          Grill the Chicken:

            Preheat your grill or a grill pan over medium-high heat. Once the grill is hot, place the marinated chicken breasts on it. Grill each side for about 6-7 minutes, or until the chicken is cooked through (the internal temperature should reach 165°F/74°C). Once done, remove from the grill and let the chicken rest for a few minutes before slicing it into thin strips.

              Assemble the Wraps:

                Lightly warm the whole wheat tortillas on the grill for about 30 seconds on each side until they are pliable. On each tortilla, place a generous amount of the sliced grilled chicken in the center. Top with a plentiful scoop of mango salsa followed by a few slices of fresh avocado.

                  Wrap it Up:

                    To form the wrap, fold in the sides of the tortilla over the filling, then roll it tightly from the bottom upwards to completely encase the filling.
