2 cups fresh cherries, pitted and halved

1 tablespoon olive oil

1 tablespoon honey (or maple syrup for a vegan option)

1 teaspoon lime juice

8 small corn tortillas

1 cup crumbled feta cheese (or a dairy-free alternative)

1/2 cup fresh mint leaves, finely chopped

1 avocado, sliced

1/4 cup sour cream or Greek yogurt (optional)

Salt and pepper, to taste

Prepare the Cherries: In a mixing bowl, combine the pitted and halved cherries with olive oil, honey (or maple syrup), lime juice, and a light sprinkle of salt and pepper. Gently toss all the ingredients together, ensuring the cherries are well coated.
