Ingredients

1 (8.5 oz) box cornbread mix

1 cup shredded sharp cheddar cheese, divided

1 cup whole milk

2 large eggs

1 cup creamed corn

1 cup whole kernel corn, drained

1/2 cup diced green bell pepper

1/2 cup diced onion

1/4 cup unsalted butter, melted

1 tablespoon honey (optional for sweetness)

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

Fresh chives, chopped (for garnish, optional)

Instructions

Preheat Oven: Start by preheating your oven to 375°F (190°C) to ensure it's hot and ready for baking.

Prepare Baking Dish: Grease a 9x13 inch baking dish or casserole pan generously with cooking spray or a drizzle of melted butter to prevent sticking.

Mix Wet Ingredients: In a large mixing bowl, combine the whole milk, melted butter, optional honey, and eggs. Whisk together until the mixture is smooth and well combined.

Add Corn and Vegetables: Stir in the creamed corn, whole kernel corn, diced green bell pepper, diced onion, and half of the shredded cheddar cheese (set aside the remaining cheese for topping later).

Combine Dry Ingredients: In a separate bowl, mix together the cornbread mix, baking powder, salt, black pepper, and garlic powder until evenly blended.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet mixture. Stir gently until just combined—it's okay if you have a few lumps; avoid overmixing for the best texture!

Transfer to Dish: Pour the cornbread batter into the prepared baking dish, spreading it out evenly with a spatula.

Top with Cheese: Evenly sprinkle the remaining cheddar cheese over the top of the batter for a delicious cheesy crust.

Bake: Place the casserole in the preheated oven and bake for 30-35 minutes. The casserole is done when the top is golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the casserole to cool for about 10 minutes before cutting it into squares. For an extra touch, garnish with freshly chopped chives if desired, and serve warm.
