Garlic Butter Turkey Meatball Subs

For the Meatballs:

1 pound ground turkey

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

2 cloves garlic, minced

1 large egg, lightly beaten

1 teaspoon dried oregano

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon ground black pepper

For the Garlic Butter Sauce:

1/4 cup unsalted butter

4 cloves garlic, minced

1 tablespoon chopped fresh parsley

1/2 teaspoon red pepper flakes (optional for a kick)

For Assembling:

4 sub rolls, preferably lightly toasted

1 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

Additional chopped parsley for garnish (optional)

Instructions
 

Prepare the Meatballs:

    In a large mixing bowl, combine the ground turkey, panko breadcrumbs, parmesan cheese, chopped parsley, minced garlic, beaten egg, oregano, onion powder, salt, and black pepper. Using your hands, mix gently until well combined, being careful not to overmix to keep the meatballs tender.

      Shape the Meatballs:

        Preheat your oven to 400°F (200°C). With your hands, form the mixture into meatballs about 1 to 1.5 inches in diameter. Arrange the meatballs on a lined baking sheet, spacing them evenly for proper cooking.

          Bake the Meatballs:

            Bake the meatballs in the preheated oven for 20-25 minutes, or until they are fully cooked through and have turned a nice golden brown.

              Make the Garlic Butter Sauce:

                While the meatballs are baking, melt the butter in a small saucepan over medium heat. Once melted, add the minced garlic and sauté for approximately 1 minute, or until fragrant (be careful not to burn it). Stir in the chopped parsley and red pepper flakes (if using), then remove from heat.

                  Assemble the Subs:

                    In a small saucepan, gently warm the marinara sauce over low heat. Carefully slice the sub rolls open, ensuring not to cut all the way through, creating a pocket. Place the rolls on a baking sheet.

                      Spoon a generous amount of marinara sauce into each roll, insert 3-4 turkey meatballs into the sauce, drizzle with the delicious garlic butter sauce, and generously top with shredded mozzarella cheese.

                        Bake the Subs:

                          Place the assembled subs back in the oven and bake for an additional 5-7 minutes, or until the cheese is melted, bubbly, and slightly golden.

                            Serve:
