2 tablespoons olive oil

2 pounds russet potatoes, peeled and chopped into uniform chunks

½ cup heavy cream

¼ cup whole milk

4 tablespoons salted butter, softened

½ teaspoon garlic powder

Additional salt, to taste

Fresh parsley, finely chopped (for garnish)

Prepare the Potatoes: In a large pot, place the potato chunks and cover them with cold water, ensuring they are fully submerged. Add a generous pinch of salt to the water. Once cooked, drain the potatoes and return them to the pot.
