Ingredients

1 ½ cups vanilla bean frozen yogurt (slightly softened)

1 cup all-purpose flour

½ cup granulated sugar

½ cup unsalted butter, melted

2 large eggs, at room temperature

1 tsp pure vanilla extract

1 tsp baking powder

¼ tsp salt

½ cup mini chocolate chips (optional)

¼ cup colorful sprinkles (optional, for decoration)

Instructions

Prepare the Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until well combined. Set aside.

Mix the Wet Ingredients: In a large mixing bowl, combine the melted butter and granulated sugar. Using a hand mixer or whisk, beat together until the mixture is smooth and creamy. Add the eggs and pure vanilla extract to the bowl, mixing well until everything is fully incorporated.

Combine Wet and Dry Mixtures: Gradually fold the dry ingredients into the wet mixture using a spatula. Mix gently until just combined, taking care not to overmix. If you're using mini chocolate chips, fold them in carefully at this stage.

Prepare for Baking: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan with cooking spray or parchment paper for easy removal. Pour the cake batter into the prepared baking pan, spreading it evenly to ensure uniform thickness.

Bake the Cake Base: Place the pan in the preheated oven and bake for 20-25 minutes. The edges should be lightly golden, and a toothpick inserted in the center should come out clean. Once baked, remove from the oven and allow the cake base to cool completely in the pan.

Create the Yogurt Layer: After the cake base has cooled, take the slightly softened vanilla bean frozen yogurt and spread it evenly over the top of the cake. Use a spatula to smooth it out, making sure to cover the entire surface.

Freeze the Cake Bars: Carefully place the assembled cake in the freezer and allow it to set for at least 4-6 hours or until the yogurt is firm.

Cut and Serve: Once the frozen yogurt is set, take the cake from the freezer and let it sit at room temperature for about 5-10 minutes to soften slightly, which will make cutting easier. With a sharp knife, cut the dessert into bars. For an extra touch, you can sprinkle colorful sprinkles on top.

Enjoy: Serve the bars immediately for a refreshing treat, or store any leftovers in an airtight container back in the freezer for later enjoyment!
