Ingredients

2 cups plain Greek yogurt

1 cup crushed pineapple (well-drained)

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup crushed graham crackers

1/2 cup unsweetened shredded coconut

1/4 cup melted coconut oil

Fresh pineapple slices or rings, for garnish

Optional: whipped cream for topping

Instructions

Prepare the Crust: In a mixing bowl, combine the crushed graham crackers, shredded coconut, and melted coconut oil. Stir the mixture thoroughly until all crumbs are well-coated with oil, forming a cohesive crust.

Shape the Rounds: Line a muffin tin with silicone or paper liners. Carefully press about 1 tablespoon of the graham cracker mixture into the bottom of each liner, ensuring it's tightly packed to create a sturdy base for your frozen yogurt rounds.

Create the Yogurt Filling: In a separate bowl, blend the Greek yogurt, drained crushed pineapple, honey (or maple syrup), and vanilla extract until smooth and creamy. Taste the mixture and adjust the sweetness, if desired, to suit your preferences.

Assemble the Cups: Spoon the yogurt filling evenly over the graham cracker crust in each muffin liner, filling them to the top. Gently tap the muffin tray on the countertop to eliminate air bubbles and ensure an even surface.

Freeze the Rounds: Transfer the muffin tin to the freezer and allow the rounds to freeze for a minimum of 4 hours, or until they are completely solid.

Remove from Muffin Tin: Once fully frozen, carefully remove the rounds from the muffin tin by gently pulling on the liners. If using paper liners, let them sit at room temperature for about 2 minutes to make peeling easier.

Garnish and Serve: Serve the frozen yogurt rounds right away, garnished with a fresh pineapple slice or ring, and a dollop of whipped cream if you like. Enjoy your refreshing tropical treat!
