1 cup fresh pineapple, finely chopped into small pieces

¼ cup shredded coconut (optional, but adds a nice texture)

Silicone muffin molds or ice cube trays for shaping your snacks

Instructions
 

In a large mixing bowl, combine the Greek yogurt, finely chopped pineapple, honey (or maple syrup), and vanilla extract. Use a spatula or whisk to stir the mixture until fully blended and creamy.

    Gently fold in half of the granola, along with the shredded coconut (if using) and the chopped nuts. Mix until the crunchy ingredients are evenly distributed throughout the yogurt.

      Carefully spoon the yogurt mixture into the silicone muffin molds or ice cube trays, filling each cavity about three-quarters full to allow room for expansion as they freeze.

        Evenly distribute the remaining granola and chopped nuts on top of each filled mold, pressing down lightly to ensure they stick to the yogurt mixture and add to the crunch factor.

          Cover the molds with plastic wrap or a lid to prevent ice crystals from forming, and place them in the freezer. Allow them to freeze for at least 4 hours or until completely solid.

            After they are fully frozen, to remove the yogurt bombs, gently twist or pull on the sides of the silicone molds. If they are difficult to release, run warm water over the outside of the molds for a few seconds to loosen them.
