Frozen Yogurt & Fruit Ice Cube Pops

Ingredients
  

2 cups plain Greek yogurt (or your favorite flavored yogurt)

1 cup fresh strawberries, hulled and sliced

1 cup fresh blueberries

1 cup pineapple chunks (fresh or canned, drained)

2 tablespoons honey or maple syrup (optional, for additional sweetness)

1 teaspoon vanilla extract (optional, for flavor enhancement)

A pinch of salt

12 ice pop molds or small cups with wooden sticks

Prepare the Fruit: In a medium mixing bowl, combine the sliced strawberries, blueberries, and pineapple chunks. If the fruits taste a bit tart, drizzle a teaspoon of honey or maple syrup over them and gently fold to coat the fruits evenly. Set this mixture aside to allow the flavors to meld.

    Create the Yogurt Base: In another large bowl, whisk together the Greek yogurt, any additional honey (if desired), vanilla extract, and a pinch of salt until the mixture is smooth and creamy. This will serve as the base for your pops.

      Layering the Pops: Begin by adding a tablespoon of the yogurt mixture to the bottom of each ice pop mold or small cup. Follow this with a layer of the fruit mixture. Continue to alternate layers of yogurt and fruit until you reach the top of each mold or cup, ensuring the last layer is yogurt for a nice finish.

        Insert Sticks: For ice pop molds, carefully insert the sticks into the center of each pop. If you are using small cups, place a stick in the middle of each cup, making sure it's upright.

          Freeze the Pops: Place the filled molds or cups in the freezer and allow them to freeze completely for at least 4 to 6 hours, or until they are solid to the touch.

            Unmold and Serve: Once fully frozen, remove the molds from the freezer. To release the pops, run warm water over the outside of the molds for a few seconds, then gently pull the pops out. Serve them immediately for a refreshing treat, or store them in a freezer bag for later enjoyment.

              Optional Garnish: For an extra touch of flair, drizzle a little honey or sprinkle some shredded coconut on top of the pops just before serving.
