Ingredients

1 cup plain Greek yogurt

1 cup cream cheese, softened to room temperature

1/2 cup Biscoff cookie spread

1/2 cup powdered sugar

1 teaspoon pure vanilla extract

1/2 cup Biscoff cookies, crushed (plus extra for garnishing)

1/4 cup milk (to adjust consistency, if necessary)

10 popsicle molds and sticks

Instructions

Prepare the Cheesecake Mixture: In a large mixing bowl, combine the softened cream cheese and Biscoff cookie spread. Using an electric mixer, beat the mixture on medium speed until it becomes smooth and creamy, ensuring there are no lumps.

Incorporate Yogurt and Sweetness: Carefully add the plain Greek yogurt, powdered sugar, and vanilla extract to the cream cheese mixture. Continue to mix on medium speed until everything is completely blended and the mixture is silky. If the consistency is overly thick, add the milk a tablespoon at a time, mixing until you reach a creamy and spoonable texture.

Fold in Crushed Cookies: With a spatula, gently fold the crushed Biscoff cookies into the cheesecake mixture. Make sure the cookie pieces are evenly distributed throughout the batter for added deliciousness in every bite.

Fill the Popsicle Molds: Using a spoon or a piping bag, transfer the cheesecake mixture into the popsicle molds. Be sure to leave a small space at the top of each mold to allow the mixture to expand as it freezes. Lightly tap the molds on the counter to help dislodge any trapped air bubbles.

Insert the Sticks: Carefully place the popsicle sticks into the center of each mold. Ensure that the sticks are upright and properly positioned for easy handling later.

Optional Crunchy Topping: If you want to add a delightful crunch, sprinkle a few extra crushed Biscoff cookies on top of the cheesecake mixture before sealing the molds.

Freeze Until Solid: Put the filled popsicle molds into the freezer. Allow them to freeze for a minimum of 4 to 6 hours, or until they are completely solid and firm to the touch.

Unmold the Popsicles: When you’re ready to enjoy the pops, run warm water over the outside of the molds for a few seconds to loosen the pops. Gently pull on the sticks to remove the popsicles from their molds.

Serve and Delight in the Flavor: These cheesecake pops can be enjoyed right away! For an impressive presentation, drizzle a bit of warmed Biscoff cookie spread over the top of the pops or coat them in more crushed Biscoff cookies before serving.
