Lay the banana slices out in a single layer on a baking sheet lined with parchment paper. Place the baking sheet in the freezer for about 30 minutes, or until the banana slices are slightly firm.

    Mix the Yogurt: In a medium-sized mixing bowl, combine the plain Greek yogurt, honey (or maple syrup if you're opting for a vegan version), pure vanilla extract, and ground cinnamon. Use a whisk or a spoon to mix these ingredients together until they form a smooth and creamy blend.
