Ingredients

4 cups seedless watermelon, chopped into small cubes

1/2 cup fresh lime juice (about 4-5 limes)

1/4 cup honey or agave syrup (adjust based on your sweetness preference)

1 teaspoon finely grated lime zest

A pinch of sea salt

Optional: Fresh mint leaves for garnish

Instructions

Prepare the Watermelon: Begin by placing the chopped watermelon cubes into a blender or food processor. Blend on high speed until the mixture is completely smooth. You may need to stop occasionally to scrape down the sides of the container to ensure all watermelon pieces are blended thoroughly.

Mix Ingredients: Once smooth, add the fresh lime juice, honey or agave syrup, lime zest, and a pinch of sea salt into the blender with the watermelon puree. Blend again until all ingredients are evenly incorporated, creating a vibrant mixture.

Taste and Adjust: Take a moment to taste the mixture. If you prefer a sweeter flavor, add a little more honey or agave syrup, or if you want more tartness, incorporate additional lime juice. Blend again briefly to mix.

Prepare the Mold: Carefully pour the watermelon-lime mixture into a greased 8x8 inch baking dish or silicone mold. For easier removal later, you can line the dish with parchment paper before adding the mixture.

Freeze: Place the baking dish in the freezer and let it chill for about 4 to 6 hours, or until the mixture is completely frozen and firm to the touch.

Cut and Serve: Once the bars are frozen solid, remove the dish from the freezer. If you’re using a metal baking dish, allow it to sit at room temperature for about 5 minutes before cutting. Use a sharp knife to slice the frozen mixture into bars or squares of your desired size.

Garnish: For an added touch, garnish each watermelon lime bar with fresh mint leaves. This not only enhances the flavor but also adds a delightful pop of color to your presentation.

Enjoy: Serve the bars immediately for a refreshing treat. If you have leftovers, store them in an airtight container in the freezer for up to a month to enjoy later!
