2 cups fresh or frozen peaches, diced

1 cup Greek yogurt (plain or vanilla)

1/2 cup coconut milk (either canned or from a carton)

1/4 cup honey or maple syrup (adjust to your preferred sweetness)

1 teaspoon vanilla extract

Juice of 1 lemon

1/4 teaspoon salt

1/2 cup granola or crushed nuts (optional, for topping)

Prep the Peaches: If you are using fresh peaches, start by washing them thoroughly, peeling the skin, and chopping them into small dice. For frozen peaches, ensure they are slightly thawed to make blending easier.

    Blend Ingredients: In a blender or food processor, combine the diced peaches, Greek yogurt, coconut milk, honey (or maple syrup), vanilla extract, lemon juice, and salt. Blend the mixture on high speed until it reaches a smooth and creamy consistency, stopping occasionally to scrape down the sides to ensure everything is well incorporated.

      Taste and Adjust: Once blended, take a moment to taste the mixture. If you prefer a sweeter flavor, feel free to add more honey or maple syrup. Blend again for a few seconds to mix in the additional sweetness.

        Prepare the Molds: Pour the peach mixture evenly into silicone ice cream bar molds. Be sure to leave a little space at the top of each mold to allow for expansion as the mixture freezes.

          Insert Sticks: If your molds feature slots for sticks, insert them at this stage. If not, you can freeze the molds for about 1 to 2 hours until the mixture is slightly firm before inserting the sticks to keep them upright.

            Freeze: Carefully place the filled molds into the freezer and allow them to freeze for at least 4 to 6 hours, or until they are completely solid.

              Unmold the Bars: To remove the frozen bars, hold the molds under warm running water for a few seconds to help release them. Gently pull the bars out of the molds; they should come out easily.
