1 cup Greek yogurt (plain or vanilla)

2 tablespoons matcha green tea powder

2 tablespoons honey (adjust to your sweetness preference)

1 teaspoon vanilla extract

A pinch of sea salt

Fresh fruit for garnish (such as raspberries, blueberries, or kiwi slices)

Instructions
 

In a medium mixing bowl, combine the Greek yogurt, matcha green tea powder, honey, vanilla extract, and a pinch of sea salt. Using a whisk, blend the ingredients together vigorously until the mixture is smooth and exhibits a vibrant green hue. Ensure there are no clumps of matcha remaining for a silky texture.

    Taste the matcha yogurt mixture and, if desired, adjust the sweetness by adding additional honey, mixing well after each addition.

      Prepare a mini muffin tin or silicone mold by lining it with parchment paper to facilitate easy removal. If you don't have these, mini ice cube trays also work great!

        Using a spoon, fill each cavity of the muffin tin or mold with the matcha yogurt mixture until they are approximately 3/4 full. For an aesthetically pleasing touch, arrange pieces of fresh fruit atop the yogurt before freezing.

          To eliminate any air bubbles and to ensure an even surface, gently tap the filled tin on the countertop a few times.

            Transfer the muffin tin or molds to the freezer and allow them to freeze for a minimum of 4-6 hours, or until the yogurt bites are completely solid.

              Once frozen, carefully extract the matcha yogurt bites from their molds. If you experience any sticking, run warm water over the bottom of the mold for a few seconds to loosen them.

                Serve the matcha yogurt bites immediately for a delightful treat, or store any leftovers in an airtight container in the freezer. They make for a refreshing snack that’s perfect for a quick uplift at any time!
