Frozen Mango Pineapple Pops

Ingredients
  

2 ripe mangoes, peeled and diced into small pieces

1 cup pineapple chunks (use fresh or canned with a bit of juice)

1/2 cup full-fat coconut milk for a creamy texture

2 tablespoons honey or agave syrup (adjust based on your desired sweetness)

1 tablespoon fresh lime juice (squeezed from a lime)

A pinch of salt to enhance the flavors

Optional: Fresh mint leaves for a vibrant garnish

Instructions
 

Begin by placing the diced mangoes and pineapple chunks into your blender.

    Add the coconut milk, honey (or agave syrup), freshly squeezed lime juice, and a pinch of salt to the blender.

      Blend the mixture on high speed until it reaches a completely smooth and creamy consistency. Use a spatula to scrape down the sides of the blender as needed to ensure all ingredients are well combined.

        Taste the blended mixture and adjust the sweetness or acidity by adding more honey or lime juice, based on your preference.

          Carefully pour the blended fruit mixture into popsicle molds, making sure to leave a small space at the top of each mold to allow for the mixture to expand as it freezes.

            If you desire an extra burst of flavor, drop one or two fresh mint leaves into each mold before adding the sticks.

              Insert the wooden sticks or lids into the molds, ensuring they are centered and secure for optimal freezing.

                Place the molds in the freezer and allow them to freeze for a minimum of 4-6 hours or until the popsicles are completely solid.

                  To successfully release the popsicles, run warm water over the outside of the molds for a few seconds, or let them sit at room temperature for about a minute before gently pulling them out.
