Ingredients

For the Base:

1 ½ cups rolled oats

1 cup almond flour (or any nut-based flour)

1/2 cup coconut oil, melted

1/4 cup maple syrup or agave nectar

1/4 teaspoon sea salt

1 teaspoon vanilla extract

For the Cherry Layer:

2 cups frozen cherries, thawed and roughly chopped

2 tablespoons honey or agave syrup

1 tablespoon lemon juice

1 tablespoon cornstarch

For the Chocolate Drizzle:

1/2 cup dark chocolate chips

1 tablespoon coconut oil

Instructions

Prepare the Base:

    - In a large mixing bowl, combine the rolled oats, almond flour, melted coconut oil, maple syrup, sea salt, and vanilla extract. Stir thoroughly until the mixture forms a cohesive, thick dough.

      Assemble the Base:

        - Line an 8x8 inch (or similar dimension) baking dish with parchment paper, ensuring you leave some paper hanging over the edges for easy removal later. Evenly spread and press the oat mixture into the bottom of the pan, using the back of a measuring cup or your fingers to compress it firmly.

          Make the Cherry Filling:

            - In a medium saucepan over medium heat, introduce the chopped cherries, honey (or agave syrup), lemon juice, and cornstarch. Cook the mixture for about 5-7 minutes while stirring occasionally, until the mixture thickens and reaches a syrupy consistency. Remove from heat and let it cool for a few minutes.

              Layer the Cherry Filling:

                - Carefully pour the cooled cherry mixture over the pressed oat base in the prepared pan. Use a spatula to spread it evenly over the surface.

                  Freeze the Bars:

                    - Cover the baking dish with plastic wrap and transfer it to the freezer. Freeze for at least 2 hours or until the bars are firm to the touch.

                      Prepare the Chocolate Drizzle:

                        - While the bars are freezing, melt the dark chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second increments, stirring in between, until the mixture is smooth and completely melted.

                          Drizzle with Chocolate:

                            - After the bars have firmly set, remove them from the freezer. Lift the bars out of the pan using the parchment paper overhang and transfer them to a cutting board. Drizzle the melted chocolate over the top, allowing it to cascade attractively.

                              Cut and Serve:

                                - Once the chocolate drizzle has set slightly, cut the bars into squares or rectangles. Enjoy them immediately or store any leftovers in an airtight container in the freezer for future snacking.

Prep Time: 15 minutes | Total Time: 2 hours 15 minutes | Servings: 12 bars

                                    Presentation Tips:

                                      - For a sophisticated touch, serve the bars on a decorative platter and garnish with fresh cherries or a sprinkle of chopped nuts.
