Ingredients

2 cups Greek yogurt (use plain or vanilla for flavor)

1 cup frozen blueberries (thawed)

1/4 cup honey (or substitute with maple syrup for a vegan-friendly option)

1/4 cup cocoa powder

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

A pinch of sea salt

1/2 cup granola or crushed nuts (optional, for topping)

Instructions

Prepare the Blueberry Mixture: In a blender, blend the thawed blueberries, honey, vanilla extract, and a pinch of sea salt until you achieve a smooth, velvety consistency. Set this mixture aside for layering later.

Mix the Yogurt Base: In a medium-sized mixing bowl, whisk together the Greek yogurt, melted coconut oil, and cocoa powder until they are fully incorporated and the mixture is creamy and homogenous.

Layer the Mixtures: Line a mini muffin tin or silicone muffin cups with cupcake liners for easy removal. Pour a spoonful of the yogurt mixture into each cup, filling them about halfway.

Add the Blueberry Layer: Spoon the blueberry mixture generously on top of the yogurt layer in each cup, filling them nearly to the rim. For a decorative touch, use a toothpick to swirl the blueberry mixture slightly into the yogurt for a beautiful marbled effect.

Freeze Until Firm: Carefully place the muffin tin in the freezer and allow the fudge cups to freeze for approximately 2-3 hours, or until they are completely solid.

Add Toppings: If you wish to enhance your fudge cups with a crunchy topping, sprinkle granola or crushed nuts on top of each cup just before serving. For an extra crunch, you can place the cups back in the freezer for another 30 minutes after adding the toppings.

Serve and Enjoy: Once frozen, gently pop the fudge cups out of the tin and indulge in this delightful treat! Store any leftovers in an airtight container in the freezer, where they will keep for up to one month.
