Ingredients
  

For the crust:

1 ½ cups all-purpose flour

1 tablespoon granulated sugar

½ teaspoon salt

½ cup unsalted butter, cold and cubed

4 to 6 tablespoons ice-cold water

For the filling:

4 cups seedless watermelon, cubed and lightly salted

2 tablespoons honey or agave syrup (adjust based on your sweetness preference)

Zest of 1 fresh lime

Juice of 1 fresh lime

1 teaspoon pure vanilla extract

2 tablespoons cornstarch (for thickening)

For topping:

Fresh mint leaves, finely chopped (for garnish)

Powdered sugar, for dusting (optional)

Instructions
 

Make the Galette Crust:

    - In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt until evenly mixed.

      - Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, blend the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces.

        - Gradually add ice-cold water, one tablespoon at a time, gently mixing until the dough begins to come together. Be careful not to overmix; the dough should remain tender.

          - Shape the dough into a flat disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes to firm up.

            Prepare the Watermelon Filling:

              - In a large bowl, combine the cubed watermelon, honey (or agave syrup), lime zest, lime juice, vanilla extract, and cornstarch. Gently toss the mixture, ensuring the watermelon is evenly coated without mashing the cubes. Let it rest for 15 minutes to allow the flavors to meld.

                Preheat the Oven:

                  - Preheat your oven to 400°F (200°C), ensuring it’s hot enough to create a crispy crust.

                    Roll Out the Dough:

                      - On a lightly floured surface, roll out the chilled dough into a rough circle about 12 inches in diameter. Don't worry about perfection; the rustic look enhances the galette's charm.

                        Assemble the Galette:

                          - Carefully transfer the rolled-out dough to a baking sheet lined with parchment paper.

                            - Spoon the watermelon filling into the center of the dough, leaving approximately a 2-inch border around the edges free of filling.

                              - Gently fold the edges of the dough over the filling, creating pleats as you go to partially cover the watermelon while still allowing some to peek through.

                                Bake the Galette:

                                  - Place the galette in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown and beautifully crispy.

                                    - Once done, remove it from the oven and let cool for about 10 minutes before cutting.

                                      Serve:

                                        - After cooling, you may dust the galette with powdered sugar for added sweetness, if desired. Finish with a sprinkle of chopped fresh mint.
