4 large whole wheat tortillas

1 cup shredded sharp cheddar cheese

1 cup shredded part-skim mozzarella cheese

1 cup corn kernels (can use fresh or frozen)

1 cup assorted bell peppers, diced (red, yellow, green)

1 cup zucchini, diced

1 cup fresh spinach, roughly chopped

1 ripe avocado, sliced

1 teaspoon ground cumin

1 teaspoon garlic powder

1 tablespoon extra-virgin olive oil

Salt and black pepper to taste

Sour cream or Greek yogurt, for serving

Fresh salsa, for serving

Prep the Vegetables: Heat the olive oil in a large skillet over medium heat. Add the diced bell peppers, zucchini, and corn kernels. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.

    Add Spinach and Seasoning: Stir in the chopped spinach, ground cumin, garlic powder, and season with salt and pepper. Cook for an additional 2-3 minutes, or until the spinach has wilted and all ingredients are well combined. Remove the skillet from heat and set the vegetable mixture aside.

      Assemble the Quesadillas: Preheat a non-stick skillet over medium heat. Take one tortilla and evenly sprinkle a generous amount of half the cheddar and mozzarella cheese over one side of the tortilla.

        Layer on the Veggies: On top of the cheese, add a portion of the sautéed vegetable mixture followed by a few slices of avocado. Carefully fold the tortilla in half, encasing the filling.
