Ingredients

2 cups cooked jasmine rice (best if day-old for optimal texture)

1 cup diced cooked chicken breast (or substitute with tofu for a vegetarian option)

1 cup mixed frozen vegetables (such as peas, carrots, and corn)

1/2 cup diced bell pepper (any variety of your choice)

1/2 cup chopped green onions (also known as scallions)

3 cloves garlic, finely minced

2 large eggs, lightly beaten

3 tablespoons soy sauce (or tamari for a gluten-free alternative)

1 tablespoon sesame oil (or use vegetable oil if preferred)

Salt and freshly ground black pepper to taste

Optional: 1 teaspoon fresh ginger, minced

Optional: Sesame seeds for garnish

Instructions

Prep the Ingredients: Gather and chop all ingredients beforehand for an efficient cooking process. If using day-old rice, gently break apart any clumps with a fork to ensure even cooking.

Heat the Pan: In a large wok or skillet, warm the sesame oil over medium-high heat until it shimmers, indicating it is hot.

Cook the Aromatics: Add the minced garlic to the pan, and if you're using it, the minced ginger as well. Sauté for approximately 30 seconds or until fragrant, being cautious to prevent burning the garlic.

Add the Chicken: Introduce the diced cooked chicken to the pan, and stir-fry for 2-3 minutes until the chicken is heated through.

Scramble the Eggs: Shift the chicken to one side of the pan, creating space for the eggs. Pour the beaten eggs into the cleared area and scramble until fully cooked, then combine with the chicken mixture.

Incorporate the Veggies: Add the mixed vegetables and diced bell pepper to the pan. Stir-fry everything together for an additional 3-4 minutes, ensuring the vegetables are tender yet still crisp.

Combine with Rice: Add the cooked jasmine rice to the pan. Drizzle the soy sauce over the rice and vegetables. Stir thoroughly to combine, making sure the sauce evenly coats all ingredients. Adjust seasoning with salt and pepper according to taste.

Final Stir and Serve: Incorporate the chopped green onions into the mixture, stirring to combine, and allow to cook for another minute before removing the pan from heat.

Garnish and Enjoy: Serve the fried rice hot, optionally garnished with a sprinkle of sesame seeds for added texture and flavor.
