8 oz penne pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

1 teaspoon dried basil

1/4 cup fresh basil leaves, chopped

1/2 cup grated Parmesan cheese

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Add the penne pasta and cook according to the package instructions until it reaches al dente texture (typically about 10-12 minutes). Once cooked, drain the pasta but reserve 1/2 cup of the pasta water for later use. Set the drained pasta aside.

    Prepare the Chicken: While the pasta cooks, take the chicken breasts and season both sides with salt, pepper, and the dried basil. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once the oil is hot, carefully place the chicken in the skillet. Cook for approximately 5-7 minutes on each side, or until the chicken is thoroughly cooked and has a nice golden-brown color. Once done, remove the chicken from the skillet and let it rest on a plate for a few minutes before slicing it into strips.
