Ingredients

1 lb (450g) beef flank steak, thinly sliced against the grain

2 tablespoons vegetable oil, divided

1 red bell pepper, sliced into thin strips

1 green bell pepper, sliced into thin strips

1 medium onion, sliced

2 carrots, julienned

1 cup snap peas, trimmed

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons low-sodium soy sauce

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 teaspoon cornstarch mixed with 2 tablespoons water

Salt and pepper to taste

4 large whole wheat tortillas

Fresh cilantro leaves for garnish

Lime wedges for serving

Instructions

Prepare the Beef: In a mixing bowl, season the sliced flank steak with a pinch of salt and pepper. Toss to coat evenly, then let it marinate for 10-15 minutes, allowing the salt to enhance the meat's natural flavors.

Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. When the oil is hot, add the marinated beef slices. Stir-fry for 2-3 minutes until the beef is browned and cooked through. Once done, remove the beef from the skillet and set aside on a plate.

Cook the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Once hot, add the sliced onion, red bell pepper, and green bell pepper. Stir-fry for about 4-5 minutes, or until the vegetables begin to soften but still retain some crunch.

Add Snap Peas & Seasonings: Add the snap peas, minced garlic, and grated ginger to the pan. Stir-fry for an additional 2 minutes, ensuring the snap peas retain their vibrant green color and a tender-crisp texture.

Combine Ingredients: Return the cooked beef to the skillet. Pour in the soy sauce, oyster sauce, and hoisin sauce, stirring to combine all ingredients well. Finally, add the cornstarch mixture to thicken the sauce, stirring continuously until it coats the beef and vegetables evenly. Let it cook for 1-2 more minutes, adjusting seasoning with salt and pepper to taste.

Assemble the Wraps: To warm the whole wheat tortillas, place each one in a dry skillet over medium heat for about 30 seconds on each side until pliable. Spoon a generous portion of the beef and veggie mixture onto the center of each tortilla.

Garnish and Serve: Top each wrap with a few fresh cilantro leaves for added flavor. Serve immediately with lime wedges on the side for squeezing over the wraps before enjoying.
