Ingredients

1 lb (450g) ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juices)

1 cup beef broth

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

1 tablespoon extra virgin olive oil

Fresh cilantro or sliced green onions for garnish (optional)

Sour cream and shredded cheese for serving (optional)

Instructions

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking for about 3-4 minutes until they soften. Then, stir in the minced garlic and sauté for an additional minute, until it becomes fragrant.

Brown the Ground Beef: Increase the heat to medium-high. Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook for about 5-6 minutes, or until fully browned. If there's excess fat, consider draining it away to achieve a leaner chili.

Incorporate the Beans and Tomatoes: Add the drained kidney beans, black beans, diced tomatoes with their juices, and beef broth to the pot. Stir everything together until well combined.

Season the Chili: Sprinkle in the chili powder, ground cumin, smoked paprika, salt, and black pepper. Mix thoroughly to ensure that all the seasonings are evenly distributed throughout the chili.

Let It Simmer: Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 10-15 minutes. This allows the flavors to meld beautifully.

Taste and Serve: Taste the chili and adjust the seasoning as needed. Ladle it into bowls and garnish with fresh cilantro or sliced green onions if desired. For an extra touch of richness, add a dollop of sour cream and a sprinkle of shredded cheese on top before serving.
