¼ cup rice vinegar

2 tablespoons sugar

1 large cucumber, julienned

1 large ripe avocado, sliced into strips

2 tablespoons toasted sesame seeds (optional)

Soy sauce (for serving)

Instructions
 

Prepare the Sushi Rice: Begin by rinsing the sushi rice under cold water in a fine mesh strainer until the water runs clear, removing excess starch. In a medium-sized saucepan, combine the rinsed rice with 2 ½ cups of water. Bring the mixture to a vigorous boil over high heat. Once boiling, reduce the heat to low, cover with a tight-fitting lid, and let it simmer for approximately 18 minutes, or until the water is fully absorbed. After that, remove the pan from heat and let it stand, still covered, for an additional 10 minutes to steam.

    Season the Rice: In a small bowl, whisk together the rice vinegar, sugar, and salt until the sugar is completely dissolved. Once the rice has finished steaming, transfer it to a large bowl or a baking dish. Gently fold the vinegar mixture into the warm rice using a wooden spoon or rice paddle, aiming to avoid mashing the grains. Spread the seasoned rice out in a thin layer on a large plate or in the dish to allow it to cool to room temperature.

      Prepare the Fillings: While the rice cools, julienne the cucumber into thin matchsticks and slice the avocado into strips. If desired, toast the sesame seeds in a dry skillet over medium heat, stirring frequently, until they turn golden brown and aromatic, about 3-5 minutes. Once done, set them aside to cool.

        Assemble the Sushi Rolls: Lay a bamboo sushi mat on your workspace. Place a sheet of nori on the mat with the shiny side facing down. With moistened hands (to prevent sticking), scoop about ½ cup of sushi rice and spread it evenly over the nori, leaving about 1 inch of space at the top edge (the edge that will seal the roll). Press the rice down gently but firmly, ensuring an even layer.

          Add the Fillings: Position a few strips of julienned cucumber and avocado horizontally across the center of the rice. If using, sprinkle a few toasted sesame seeds over the top to enhance the flavor and texture.

            Roll the Sushi: Starting from the edge closest to you, carefully lift the bamboo mat and begin to roll it away from you, tucking the fillings tightly as you roll. Continue rolling until you reach the bare edge of the nori. Use a little water on your fingertips to moisten the edge of the nori and seal the roll.

              Slice the Rolls: Using a sharp knife, moisten the blade with water to prevent sticking, and slice the roll into 6-8 equal pieces. Repeat this process with any remaining ingredients to prepare all the sushi rolls.
