Ingredients

2 cans (15 oz each) chickpeas, drained and rinsed

2 tablespoons olive oil

2 tablespoons Sriracha sauce

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon ground cumin

¼ teaspoon salt (or to taste)

¼ teaspoon black pepper

Optional: fresh parsley or cilantro for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). To simplify cleanup, line a baking sheet with parchment paper or a silicone baking mat.

Prep the Chickpeas: Once you've drained and rinsed the chickpeas, use a clean kitchen towel or paper towels to pat them dry. The drier they are, the better they will roast, resulting in a deliciously crunchy texture.

Create the Spicy Coating: In a large mixing bowl, whisk together the olive oil, Sriracha sauce, smoked paprika, garlic powder, onion powder, ground cumin, salt, and black pepper until all ingredients are smoothly blended.

Coat the Chickpeas: Add the dried chickpeas to your flavorful spice mixture. Gently toss them in the bowl until each chickpea is thoroughly coated with the Sriracha seasoning mixture.

Arrange on the Baking Sheet: Spread the coated chickpeas evenly on the lined baking sheet, ensuring there is enough space between the chickpeas to allow for even roasting and crisping.

Roast the Chickpeas: Place the baking sheet in the preheated oven and roast for about 25-30 minutes. Remember to stir the chickpeas halfway through cooking to ensure they roast evenly. Keep an eye on them, as you want them to turn golden brown without burning.

Cool and Garnish: After roasting, carefully remove the baking sheet from the oven. Allow the chickpeas to cool for a few minutes on the sheet, as they will continue to become crunchier as they cool. If you like, sprinkle with fresh parsley or cilantro for an extra touch of flavor and color.

Serve and Enjoy: Delight in your Crunchy Sriracha Roasted Chickpeas! They make for a perfect snack, a fantastic salad topping, or a fun party appetizer.
