Ingredients

1 can (15 oz) black beans, thoroughly rinsed and drained

1 cup corn, fresh, frozen, or canned

1 teaspoon ground cumin

1/2 teaspoon chili powder

1/2 teaspoon garlic powder

Sea salt and freshly cracked black pepper, to taste

1 cup cherry tomatoes, diced

1/2 cup red onion, finely chopped

1 cup shredded cheese (your choice of cheddar or a Mexican cheese blend)

12 small corn tortilla cups (store-bought or homemade)

1 ripe avocado, diced

Fresh cilantro leaves, for garnish

Sour cream or Greek yogurt, for serving (optional)

Lime wedges, for serving

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) if you wish to warm the tortilla cups.

Prepare the Filling: In a medium-sized mixing bowl, combine the rinsed black beans, corn, cumin, chili powder, garlic powder, and season generously with salt and pepper. Using a fork, gently mash the black beans while keeping some whole for added texture.

Add Fresh Ingredients: Carefully fold the diced cherry tomatoes and finely chopped red onion into the bean mixture. This will infuse your filling with freshness and vibrant flavors.

Fill the Cups: Arrange the tortilla cups on a baking sheet. Spoon the black bean mixture into each cup, filling them approximately three-quarters full to allow space for the cheese.

Add Cheese: Generously sprinkle the shredded cheese over the filled cups, letting it form a satisfying layer of gooey goodness.

Bake: If you prefer a warm dish, place the baking sheet in your preheated oven and bake for about 10-12 minutes, or until the cheese is bubbly and the tortilla cups have taken on a slightly crispy texture.

Garnish: Once baked, remove the nacho cups from the oven and let them cool for a minute. Top each cup with diced avocado and a sprinkle of fresh cilantro for a burst of color and flavor.

Serve: Serve these delicious nacho cups warm, accompanied by a dollop of sour cream or Greek yogurt if desired, along with lime wedges to squeeze over for a refreshing zing.
