Ingredients

1 lb boneless, skinless chicken breasts, diced into bite-sized pieces

1 can (15 oz) pumpkin puree

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (14.5 oz) diced tomatoes, undrained

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup chicken broth

1-2 tablespoons chili powder (adjust for desired spiciness)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon ground cinnamon

Salt and pepper to taste

1 cup corn (frozen or fresh)

Optional toppings: Sour cream, shredded cheese, diced avocado, freshly chopped cilantro

Instructions

Prepare the Chicken: Begin by cutting the chicken breasts into bite-sized pieces. Season the chicken with salt and pepper according to your preference. Set aside.

Chop the Vegetables: Finely chop the onion and mince the garlic. Keep these ingredients separate for a moment.

Layer the Ingredients: In a crockpot, layer in the diced chicken, onion, garlic, pumpkin puree, black beans, kidney beans, undrained diced tomatoes, chicken broth, corn, chili powder, cumin, smoked paprika, and ground cinnamon.

Mix Thoroughly: Stir the mixture well to ensure all the ingredients are combined and the spices are evenly distributed.

Cook the Chili: Cover the crockpot with its lid and cook on low for 6-8 hours or on high for 3-4 hours. This allows the flavors to combine and the chicken to become tender.

Shred the Chicken: If cooking on low, approximately 30 minutes before serving, use a slotted spoon to remove the chicken pieces. Shred the chicken using two forks, then return it to the chili. If using high heat, shred the chicken and continue to cook uncovered for the last 30 minutes for a thicker consistency.

Taste and Adjust Seasoning: Before serving, taste the chili and make any necessary adjustments in seasoning. Feel free to add more chili powder for heat or more salt to enhance the flavors.

Serve: Ladle the warm chili into bowls, inviting guests to add their preferred toppings such as sour cream, shredded cheese, diced avocado, and fresh cilantro.
