Ingredients

For the Chicken and Vegetables:

2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup carrots, sliced into rounds

1 cup celery, chopped into small pieces

1 cup onion, diced finely

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 cup frozen peas

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper, to taste

1/4 cup heavy cream (optional, for added creaminess)

For the Dumplings:

2 cups all-purpose flour

1 tbsp baking powder

1/2 tsp salt

1/2 cup milk

1/4 cup sour cream

1/4 cup melted butter, slightly cooled

Fresh parsley, chopped, for garnish

Instructions

Prepare the Chicken Mixture: In a large crockpot, combine the cubed chicken thighs, sliced carrots, chopped celery, diced onion, minced garlic, and frozen peas. Ensure the vegetables are evenly distributed throughout the chicken.

Season: Pour the low-sodium chicken broth over the chicken and vegetables. Season the mixture with dried thyme, rosemary, salt, and pepper. Stir gently to ensure all ingredients are well combined and coated with broth.

Cook: Cover the crockpot with its lid and set it to cook on low for 6-8 hours or on high for 3-4 hours. The chicken should be tender and fully cooked.

Make the Dumpling Batter: About 30 minutes before you plan to serve, prepare the dumplings. In a medium mixing bowl, whisk together the flour, baking powder, and salt until well combined. In another bowl, stir together the milk, sour cream, and melted butter until smooth. Gradually fold the wet ingredients into the dry ingredients, mixing just until combined (do not overmix).

Form the Dumplings: Using a spoon, drop generous spoonfuls of the dumpling batter onto the surface of the chicken and broth mixture in the crockpot, creating small, spaced-out mounds.

Cook the Dumplings: Cover the crockpot once again and cook on high for an additional 30-45 minutes. The dumplings are done when they have risen, are fluffy, and no longer doughy in the center.

Optional Creaminess: For a creamier broth, stir in 1/4 cup of heavy cream right before serving, mixing gently to combine.

Serve: Once the dumplings are fully cooked, give the mixture a gentle stir. Ladle the hearty chicken and dumplings into bowls, finishing with a sprinkle of freshly chopped parsley for a burst of color and freshness.
