1 cup green or brown lentils, thoroughly rinsed

3 cups vegetable broth

1 small onion, finely chopped

2 cloves garlic, minced

1 medium carrot, grated

½ cup breadcrumbs (add more as needed for binding)

½ cup cooked quinoa (optional for enhanced texture)

1 teaspoon cumin powder

1 teaspoon paprika

½ teaspoon chili powder (adjust according to your spice preference)

Salt and pepper, to taste

2 tablespoons fresh parsley, finely chopped

2 tablespoons fresh cilantro, finely chopped

2 tablespoons olive oil for frying

For the Herb Yogurt Dip:

1 cup plain Greek yogurt

2 tablespoons fresh dill, finely chopped

1 tablespoon fresh lemon juice

1 clove garlic, minced

Salt and pepper, to taste

Cook the Lentils: In a medium saucepan, combine the rinsed lentils with the vegetable broth. Bring this mixture to a boil, then lower the heat and let it simmer gently until the lentils are tender, approximately 20-25 minutes. If there is any excess liquid after cooking, drain it and allow the lentils to cool slightly.

    Prepare the Base: In a large mixing bowl, use a fork or potato masher to roughly mash the cooked lentils. To this, add the chopped onion, minced garlic, grated carrot, breadcrumbs, cooked quinoa (if included), cumin powder, paprika, chili powder, salt, pepper, parsley, and cilantro. Stir everything together until well combined. If the mixture appears too moist to form patties, incrementally add more breadcrumbs until it becomes easily moldable.

      Form the Patties: With slightly dampened hands for easier handling, take portions of the lentil mixture and shape it into small patties, roughly 2-3 inches in diameter. Arrange the patties on a plate or a sheet of parchment paper while you get ready to fry them.

        Fry the Patties: Heat the olive oil in a large skillet over medium heat. When the oil is hot, carefully add the formed patties (you can fry them in batches if necessary to avoid overcrowding). Cook until each side is golden brown and crispy, roughly 4-5 minutes per side. Once fully cooked, transfer the patties to a paper towel-lined plate to absorb any excess oil.

          Make the Herb Yogurt Dip: In a small bowl, combine the Greek yogurt with the chopped dill, lemon juice, minced garlic, and a sprinkle of salt and pepper. Mix thoroughly and taste; adjust the seasoning if needed.
