1 pound ground turkey

1 cup shredded cheddar cheese

1 cup black beans, rinsed and drained

1 cup corn (frozen or canned, drained)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

12 small flour tortillas

Cooking spray or olive oil for brushing

Fresh cilantro, chopped (for garnish)

Sour cream or guacamole (for serving)

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper to facilitate easy cleanup later.

    Sauté the Aromatics: Heat a splash of olive oil in a skillet over medium heat. Once the oil is shimmering, add the finely chopped onion and minced garlic. Sauté for about 3-4 minutes, or until the onion turns translucent and fragrant.

      Cook the Ground Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula as it cooks. Sprinkle in the chili powder, cumin, smoked paprika, salt, and black pepper. Cook for approximately 5-7 minutes until the turkey is browned and fully cooked, ensuring no pink remains.

        Incorporate Remaining Ingredients: Once the turkey is cooked, remove the skillet from the heat. Gently fold in the rinsed black beans and drained corn. Finally, mix in the shredded cheddar cheese until everything is combined evenly.

          Prepare the Tortillas: To make the tortillas flexible and prevent tearing, wrap them in a damp paper towel and microwave for about 30 seconds. This will make them easier to roll.

            Fill the Tortillas: Lay a tortilla flat on a clean surface. Spoon approximately 2-3 tablespoons of the turkey mixture onto the lower third of the tortilla. Roll it up tightly, tucking in the sides as you go to form a compact taquito. Place each taquito seam-side down on the prepared baking sheet.
