Ingredients

4 cod fillets (6 oz each)

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon paprika

Salt and pepper, to taste

2 tablespoons fresh parsley, finely chopped (for garnish)

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

Instructions

Prepare the Cod Fillets: Begin by patting the cod fillets dry using paper towels to remove excess moisture. Once dry, season both sides generously with salt and freshly ground black pepper to enhance the flavor.

Make the Coating: In a shallow, wide bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, paprika, and a pinch of salt and pepper. Stir the mixture thoroughly to ensure all ingredients are evenly distributed.

Prepare the Sauce: In a separate small bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice until the mixture is smooth and creamy. This will add a tangy flavor that complements the cod beautifully.

Coat the Fillets: Take a cod fillet and brush a generous layer of the mayo mixture on one side. Ensure the fillet is well-coated, then press the mayo-coated side firmly into the breadcrumb mixture, allowing it to adhere well. Repeat this process for all fillets.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for approximately 5 minutes. This ensures a perfect crispy crust once you start cooking.

Air Fry the Cod: Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the coated cod fillets in the basket in a single layer, making sure they aren’t overcrowded. Air fry them for 10-12 minutes, or until the cod is cooked through and the crust is golden brown and crunchy.

Check for Doneness: To ensure the cod is safe to eat, the internal temperature should reach 145°F (63°C). If they require more time, air fry for an additional 1-2 minutes, keeping a close eye on the crust.

Garnish and Serve: Carefully remove the crispy cod fillets from the air fryer and sprinkle with freshly chopped parsley for a pop of color. Serve immediately alongside your favorite sides, such as a refreshing salad or some perfectly roasted vegetables for a balanced meal.
