Ingredients

8 oz (225g) spaghetti or pasta of your choice

2 cups cherry tomatoes, halved

3 cloves garlic, finely minced

1 cup heavy cream

1 cup fresh basil leaves, tightly packed

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

Pinch of red pepper flakes (optional for heat)

Instructions

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Add the pasta and cook it according to the package directions until it reaches an al dente texture. Before draining, reserve about 1 cup of the starchy pasta water. Drain the pasta in a colander and set it aside.

Sauté the Tomatoes: In a large skillet, pour in the olive oil and heat it over medium heat. Once hot, add the finely minced garlic, sautéing for approximately 30 seconds or until fragrant. Incorporate the halved cherry tomatoes into the skillet, cooking them for 3-4 minutes until they begin to soften and blister beautifully.

Make the Creamy Sauce: Pour in the heavy cream, stirring gently. Allow the mixture to simmer for 1-2 minutes to thicken slightly. Now, add in the fresh basil leaves, letting them wilt in the heat. Season liberally with salt, freshly ground black pepper, and red pepper flakes if you desire a bit of spice.

Combine: Add the drained pasta into the skillet with the creamy tomato sauce. If the sauce appears too thick, gradually stir in reserved pasta water until you achieve your preferred creamy consistency.

Serve: Mix in the grated Parmesan cheese, ensuring it melts into the sauce beautifully. Taste the dish and adjust seasoning as needed. Serve immediately in bowls, garnished with extra basil leaves and a sprinkle of Parmesan if desired for an elegant finish.
