Ingredients

20 giant pasta shells

2 cups fresh spinach, finely chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese (plus extra for topping)

½ cup grated Parmesan cheese

1 large egg, lightly beaten

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon sea salt

½ teaspoon freshly ground black pepper

¼ teaspoon ground nutmeg

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

Cook the Pasta Shells: In a large pot, bring water to a rolling boil and add a generous amount of salt. Carefully add the giant pasta shells, cooking them according to the package instructions until they are al dente. Once cooked, drain the shells and rinse them under cold water to prevent further cooking. Set the shells aside in a single layer to cool.

Prepare the Filling: In a spacious mixing bowl, combine the chopped spinach, ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, and the beaten egg. Add the garlic powder, onion powder, sea salt, black pepper, and nutmeg. Stir everything together until you achieve a smooth, homogeneous mixture.

Fill the Shells: Using a small spoon or a piping bag for ease, take each cooked pasta shell and delicately fill it with the savory spinach and ricotta mixture. Ensure each shell is generously filled, then set them aside on a clean plate.

Prepare the Baking Dish: Pour 1 cup of marinara sauce into the bottom of a 9x13 inch baking dish to create a base that prevents the shells from sticking. Lay the stuffed shells in a single layer over the sauce, ensuring they are evenly spaced.

Top with Sauce & Cheese: Drizzle the remaining marinara sauce over the stuffed shells, ensuring they are all covered. Finally, sprinkle the extra shredded mozzarella cheese liberally over the top for a cheesy finish.

Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then carefully remove the foil and continue baking for an additional 10 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Once baked, take the dish out of the oven and allow it to rest for 5-10 minutes before serving. Garnish with fresh basil leaves for a touch of color and flavor. Serve the stuffed shells warm and enjoy this delightful dish!
