12 oz cheese tortellini (fresh or frozen)

2 tablespoons extra virgin olive oil

1 medium onion, finely diced

3 cloves garlic, minced

8 oz cremini mushrooms, sliced

4 cups fresh baby spinach

1 cup heavy cream

½ cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning blend

Salt and black pepper to taste

Fresh parsley, finely chopped (for garnish)

Cook the Tortellini: In a large pot, bring salted water to a rolling boil. Add the tortellini and cook them according to the package instructions until they reach an al dente texture. Once cooked, drain the tortellini and set aside.
