Ingredients

8 oz (about 225g) penne pasta

2 tablespoons olive oil

1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

3 garlic cloves, minced

4 cups fresh spinach, loosely packed

1 cup heavy cream

½ cup chicken broth, low sodium preferred

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

¼ teaspoon red pepper flakes (optional, for a spicy kick)

Fresh basil leaves for garnish

Instructions

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the penne pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta and set it aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. When the oil is shimmering, add the diced chicken, seasoning it generously with salt, pepper, and Italian seasoning. Cook for 5-7 minutes or until the chicken is golden brown and no longer pink in the center. Using a slotted spoon, remove the cooked chicken from the skillet and transfer it to a plate; set aside.

Sauté Garlic and Spinach: In the same skillet, add the minced garlic and sauté for approximately 1 minute until it becomes fragrant, being careful not to let it burn. Next, add the fresh spinach to the skillet and cook for about 2-3 minutes, or until it is wilted and tender.

Create the Creamy Sauce: Reduce the heat to low, then pour in the heavy cream and chicken broth, stirring to combine. Allow the mixture to come to a gentle simmer. Gradually add the grated Parmesan cheese, stirring constantly until the cheese is melted and the sauce is creamy and smooth. If you like a bit of heat, this is the moment to add the red pepper flakes.

Combine Everything: Return the previously cooked chicken to the skillet, followed by the drained pasta. Gently toss all the ingredients together, allowing the pasta to thoroughly coat itself in the creamy sauce. Cook for an additional 2-3 minutes, just enough to heat everything through.

Taste and Adjust: Sample the dish, adjusting the seasoning with more salt and pepper as needed to enhance the flavors.

Serve: Plate the pasta and garnish with luscious fresh basil leaves. For an extra touch of indulgence, sprinkle more Parmesan cheese on top before serving. Enjoy your delicious creamy spinach and chicken skillet pasta hot from the stove!
