12 oz fettuccine (or your preferred pasta)

1 cup canned pumpkin puree

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

3 cloves garlic, finely minced

2 tablespoons unsalted butter

1 teaspoon sage (fresh, if available, or dried)

Salt and freshly cracked black pepper to taste

Optional: a pinch of grated nutmeg

Fresh parsley, chopped, for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Before draining, reserve 1 cup of the pasta cooking water. Drain the pasta and set it aside.

    Prepare the Sauce: In a large skillet, melt the unsalted butter over medium heat. Add the minced garlic and sauté for approximately 1 minute, or until fragrant, being careful not to let it burn.

      Add the Pumpkin: Stir in the pumpkin puree and then pour in the heavy cream. Mix everything together thoroughly and let the sauce simmer for about 4–5 minutes, allowing it to warm and combine flavors.
