1 cup fresh basil leaves, tightly packed

Juice and zest of 1 large lemon

2 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper, to taste

Cherry tomatoes, halved (for garnish)

Extra fresh basil leaves, for garnish

Prepare the Zoodles: Using a spiralizer, transform the zucchinis into noodle-like strands known as zoodles. If a spiralizer is unavailable, a vegetable peeler can be used to create thin strips. Once prepared, set the zoodles aside for later.

    Make the Creamy Sauce: In a high-speed blender or food processor, combine the fresh basil leaves, heavy cream (or coconut cream), grated Parmesan cheese (or nutritional yeast), lemon juice, lemon zest, and minced garlic. Blend on high until the mixture achieves a smooth and creamy consistency. After blending, taste and season with salt and pepper, adjusting to preference.
